In general, muffins are one of the easier recipes to make, and this also applies to gluten free baking. They especially lend themselves to the novice gluten free baker. You can truly make them your own by including any number of healthy ingredients, leaving out dairy, substituting a healthier type of sugar, and, of course, substituting your own gluten free flour preferences. We should mention that we have not made this particular recipe with a commercial gluten free flour mix, as we prefer to make up our own, largely as a result of allergies to so many of the ingredients included in many of the commercial blends. Muffins have become an old standby for a quick dessert, or snack, in our family. We have made them both savory, or sweet, depending on the season, and/or what ingredients are available to us at the moment. Looking through the freezer the other day, I came across the last bag of frozen mixed berries (raspberries, blackberries and blueberries), that beckoned to be used. Around the end of October the weather begins to change. Halloween, the day when children everywhere don creative costumes to go hunting for treats arrives, and the seemingly normal next-door neighbor’s yard suddenly becomes strewn with cardboard head stones and fake spider webbing. But what to do when gluten is an issue?
As a child, the costume was definitely the biggest part of Halloween every year, far overshadowing the inevitable small pile of collected candy. Like most little kids, I would know weeks in advance what I wanted to be that year; a princess, a flower fairy, super girl, just to name a few. Not knowing that I was Celiac at the time, but still having many other food sensitivites related to bad vaccine reactions as an infant, most candy, certainly anything brightly colored, or containing high-fructose anything, was out. Commercial sweets and candies were really not something I was used to anyway; the gluey smell of artificial color and sugar actually made me sort of sick. Instead, for years around Halloween, my Mom would find, or make, healthy alternatives for sweet treats available, so neither I, nor my friends would feel we were missing out in any way. And none of us did, in fact I don’t think anyone even thought about the fact that they weren’t eating “real” M&M’s. Instead, it was more about having fun with friends. Continue reading
There is just something about the combination of peanut butter and chocolate; no matter the recipe it always ends up tasting amazing! Maybe it evokes memories of Halloween as a child? Whatever the reason, this classic duo has made its way into many favorite recipes, including this one.
With a sudden craving for chocolate the other day (I’m sure you can relate to the moment when any dessert containing chocolate sounds delicious) this seemed like a fun recipe to make, and has become a fast favorite with everyone. Our newly established vegetable garden has been keeping us on our toes throughout the summer, and we are in the midst of harvesting zucchini, cucumbers, chili peppers, potatoes, squash, lots of herbs and tomatoes.
Dealing with the challenges of a fractured wrist and the resulting surgery and ensuing healing process (it’s now been almost 8 weeks and healing very well), has held up our latest book project somewhat (as well as slowed down our posting frequency). It’s the end of October already; can you believe it? Here in New Mexico, the weather is definitely beginning to show the change of seasons with a noticeable chill in the air and the familiar smell of wood smoke on the breeze. Halloween is just around the corner. The bastion of a thousand bad horror films, the favorite day of any little ghost or goblin ever to wear a costume and beg for candy. What would the end of October be without all the fake spiders, jack o’ lanterns, trick or treaters, ghouls and ghosts. . . and sugar. Frightful! What is it about cupcakes? They seem to be appearing everywhere you look, on TV, in books, magazines, and the bakery around the corner. Reminiscent of childhood, parties and picnics, everyone loves them to the point that it has nearly become a global obsession.
