If you are new to the gluten free lifestyle and are terrified at the thought of baking your own bread, we wanted to highlight a commercially available gf bread mix by Pamela’s. As you may already know, there are several easy bread recipes in our book (A Celebration of Gluten Free Baking), which we encourage you to try. But, given everyone’s hectic and busy lives, sometimes a mix can be a quick and easy alternative. The price of the mix is pretty comparable to any store bought gluten free bread, while giving you the experience of freshly baked bread in your own home. Continue reading
Although we generally make all our baked goods from scratch, we came across the ‘NOW brand’ gluten free brownie mix, tried it out and decided to share it here. What intrigued us about this particular mix is that it contains no flour whatsoever.
The ingredients listed are: organic turbinado sugar, organic cocoa powder, instantized whey protein isolate, organic flax seed meal, guar gum, natural sea salt, organic vanilla extract, baking powder and natural almond flavor. The directions require the addition of 3 eggs, 2/3 cup of hot water and 2/3 cup of oil. We wanted to reduce the amount of the oil and instead used 1 cup of hot water and 1/2 cup of extra virgin olive oil. It bakes for about 35 minutes at 350° F/180°C and, voila, the result was pretty impressive. We all loved it.
