Potato and Zucchini Pie

As we are rapidly moving towards the Summer season, vegetables of all sorts are making a welcome appearance in local farmers markets, freshly picked from the garden, washed and waiting to be made into tempting recipes. There really is nothing like fresh vegetables. During the Winter, when most fresh produce has to be trucked into grocery stores, unless you are one of the lucky few who happens to live in a perennially warm climate, we all think we remember what a truly fresh head of lettuce, a carrot, or a tomato tastes like. Then the seasons change, and warm Spring weather returns, along with seedlings growing in the garden, and weekend farmers’ markets, proving that whatever we thought about the taste of vegetables in the Winter was wrong. For Meatless Monday this week, we wanted to share a wonderful recipe for a gluten free crustless quiche/frittata. . . but I guess today is Wednesday. One day slides into the next, and before you know it, the post you intended to write on Monday has neatly slid into Tuesday and then Wednesday.  Oh well. . . Tropical Salads - Prepared Greens and Cubed Mangoes

Here are the recipes for two simple and beautiful salads. Winter has been challenging, to say the least,  with never ending cold and waaaaay too much snow, and we longed for a salad, hinting at the warm Spring and Summer weather to come. Blood oranges and mangoes came to mind – we love both of these and they just happened to be available in the store.

Since mangoes fall into our most favorite fruit group, lets start off with that. The wonderfully sweet champagne mangoes lend themselves so beautifully and simply to this salad, with their great taste and creamy texture. Continue reading
